    I discovered that the Spanish are very proud of their ham –and rightly so — when I first saw and visited el Museo del Jamón (Ham Museum) in Madrid many years ago. It was a unique restaurant with perhaps a hundred cured or curing hams hanging from the ceiling.

    It became a regular watering and eating hole during my visits to Madrid, to taste those delicious museum pieces of Jamón Ibérico.

    I understand there are several of those “museums” in Spain now.
